‘Snakes’ of beef

Thin strips of beef are marinated and then threaded in zig-zag or ‘snake’ fashion on skewers – more interesting and much more economical than serving large steaks to everyone.

Ingredients

Quantity Ingredient
750g grilling steak, 4 cm thick
125ml soy sauce
2 tablespoons honey
1 tablespoon dry sherry
2 garlic cloves, crushed
1 tablespoon fresh ginger, grated
few drops sesame oil

Method

  1. Slice steak across grain into 5 mm strips and place in a bowl. Mix remaining ingredients and pour over. Leave to marinate, covered, at room temperature for 1 hour, turning meat over several times to coat evenly.
  2. Soak the bamboo skewers in hot water for 30 minutes. Remove beef strips from marinade and thread onto skewers, zig-zag or ‘snake’ fashion. Cook under a preheated very hot grill for about 3 minutes, turning once and brushing with marinade. Beef should be rare inside. Serve skewers on a bed of rice, or push meat off skewers into Lebanese bread pockets, with addition of chopped celery, peppers or bean sprouts.
