Ingredients

Quantity Ingredient
500-700g brussels sprouts
60g butter
salt and freshly ground black pepper
parsley, finely chopped
lemon juice, squeezed

Method

  1. Cook sprouts in boiling water until tender and drain well. Heat 45 g butter in a saucepan, put in the sprouts, and toss and shake over high heat for 4–5 minutes. Do this by shaking the saucepan and not by using a fork or spoon. The sprouts will then be crisped very lightly on the outside. Season well with salt and pepper. Add parsley, a squeeze of lemon juice, and remaining butter and shake well.
