Use for barbecued fish or chicken.

Ingredients

Quantity Ingredient
80ml olive oil
150ml white wine
1 lemon, juiced
1 onion, sliced
1 carrot, sliced
1 celery stalk, sliced
1 sprig parsley
1 bay leaf
1 tablespoon fresh thyme, dill or rosemary, chopped
or 1 teaspoon dried thyme, dill or rosemary
6 peppercorns

Method

  1. Combine all ingredients and marinate fish for 20–30 minutes, chicken for 1 hour or more before barbecuing. Brush remaining marinade over food while cooking.
