An unusual salad, delicious with cold meats or fish.

Ingredients

Quantity Ingredient
4 beetroot, freshly cooked and peeled
1 teaspoon coarse sea salt
1 tablespoon fresh horseradish or prepared horseradish, grated, (not creamed)
125g sour cream
1 tablespoon orange zest, grated

Method

  1. Cut beetroot into julienne strips. Combine remaining ingredients and toss with beetroot. Cover and chill for at least 1–2 hours to blend flavours.
