Butterscotch sauce is delicious over ice cream and waffles, and butterscotch filling adds glamour to a simple cake.

Ingredients

Quantity Ingredient
60g butter
115g brown sugar
2 tablespoons cold water
1 egg yolk, beaten
60ml cream, whipped
1/2 teaspoon natural vanilla extract

Method

  1. Melt butter over low heat, add brown sugar and cook for 2 minutes, stirring. Add cold water and egg yolk and continue cooking gently, stirring, until mixture thickens. Do not allow to boil. Remove from heat and cool, then chill. Fold in whipped cream and vanilla just before serving.
