Ingredients

Quantity Ingredient
16 scallops
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon fresh basil, chopped
or 1/4 teaspoon dried basil
16 button mushrooms
2 tablespoons butter, melted
salt and freshly ground black pepper
fresh breadcrumbs
lemon wedges, to serve

Method

  1. Marinate scallops for 1 hour in olive oil, lemon juice and basil. Thread 4 skewers with scallops and mushrooms, alternating them. Brush with melted butter, season with salt and pepper and roll in breadcrumbs. Grill gently for about 2 minutes each side or until crumbs are browned. Serve with lemon wedges.
