Ingredients

Quantity Ingredient
225g self-raising flour
pinch salt
220g sugar
1 egg, lightly beaten
1 teaspoon natural vanilla extract
few drops natural almond extract
125g butter, melted
135g desiccated coconut

Method

  1. Sift flour and salt into a bowl and stir in sugar. Add remaining ingredients, except coconut, and combine. Form mixture into small balls about the size of a marble and roll in coconut. Arrange on greased baking trays, spacing well apart. Bake in a preheated moderate oven for 15 minutes or until golden. Cool on a wire rack.
