Ingredients

375g chinese noodles
salt
1 tablespoon oil
500g fresh bean sprouts
60g spring onions, finely sliced
sesame seeds, toasted, to garnish

Sesame peanut sauce

Quantity Ingredient
2 tablespoons fresh ginger, shredded
1 1/2 tablespoons sesame oil
2 1/2 teaspoons sugar
2 tablespoons sesame seeds
1 tablespoon peanut oil
4 tablespoons peanut butter
4 tablespoons water
2 tablespoons vinegar
1/2 teaspoon tabasco sauce
1/2 teaspoon freshly ground black pepper

Method

  1. Cook noodles in plenty of boiling salted water for about 7 minutes or until tender. Drain, rinse under cold water, drain again and toss lightly with oil to prevent sticking. Place noodles in a serving bowl and top with bean sprouts.
  2. To make sesame peanut sauce, marinate ginger in ½ tablespoon sesame oil mixed with ½ teaspoon sugar. Leave for 30 minutes. Toast sesame seeds in a dry, heavy frying pan over very gentle heat until golden. Place in a bowl and crush lightly with a pestle or end of a rolling pin until aroma of seeds is released. Combine peanut oil and peanut butter with rest of sesame oil and crushed seeds. Add remaining ingredients, stirring until mixed. Pour sauce over bean sprouts, and sprinkle with spring onions and sesame seeds. Toss well.
