Buns are usually made from a yeast dough, like bread, but are soft on top instead of having a crisp crust. They come in great variety – sweet, savoury, steamed or baked. The name ‘bun’ is also given to some small cakes that don’t contain yeast, and to the famous Scottish delicacy, black bun, a rich fruit filling enclosed in shortcrust pastry.
