Ingredients

Quantity Ingredient
500-700g brussels sprouts
30g butter
1 spring onion, chopped
1/2 garlic clove, crushed
salt and freshly ground black pepper
lemon juice
1 cup croutons, to garnish

Method

  1. Cook sprouts in boiling water, drain well and chop. Heat butter in a frying pan, add spring onion and garlic and cook gently without browning too much. Add sprouts, season well with salt and pepper, and add a good squeeze of lemon juice. Serve garnished with croûtons.
