Ingredients

Quantity Ingredient
500-700g brussels sprouts
2 sticks celery, sliced
45g butter
1 onion, chopped
1 tablespoon plain flour
375ml milk
salt and freshly ground black pepper
butter, melted, to finish
breadcrumbs, to finish

Method

  1. Cook sprouts in boiling water until tender and drain well. Blanch celery for 1 minute and drain. Melt butter and soften onion and celery for a few minutes. Sprinkle in flour, add milk and stir until blended. Add sprouts, season with salt and pepper and continue cooking for a few minutes to blend the whole, then turn into a flameproof dish. Sprinkle with melted butter and crumbs and brown in a preheated hot oven or under a preheated hot grill.
