Ingredients

9 slices day-old bread
185g mixed dried fruit
90g brown sugar
2 teaspoons mixed spice
1 lemon, zested
60g butter, softened
white sugar, for sprinkling

Method

  1. Soak bread in cold water to cover for 30 minutes, then squeeze out excess water and beat with a fork until smooth. Stir in fruit, sugar, spice and lemon zest and beat in butter in small pieces. Put mixture into a soufflé dish or deep ovenproof dish and bake in a preheated moderately hot oven for 1½ hours. Sprinkle surface generously with sugar before serving, accompanied by custard or cream.
