A quick dessert that tastes delicious.

Ingredients

Quantity Ingredient
60g butter
1 teaspoon lemon zest, grated
1 tablespoon lemon juice
4 firm ripe bananas
4 tablespoons brown sugar
60ml rum
cream, to serve

Method

  1. Put the butter and lemon zest and juice in a baking dish and place it in a preheated moderate oven for 2–3 minutes, just long enough to melt the butter. Remove and stir.
  2. Put bananas in baking dish, turning so they are coated with butter mixture. Sprinkle brown sugar over them and bake for 15 minutes. Heat rum, pour over bananas and set alight. Spoon burning liquor over bananas until flames die down. Serve hot with cream.
