Baked tomatoes with basil

Ingredients

Quantity Ingredient
6 large ripe tomatoes
salt and freshly ground black pepper
6 spring onions, chopped
8 fresh basil leaves, shredded or torn
80g fresh breadcrumbs
1 tablespoon butter

Method

  1. Cut each tomato in half and remove cores. Season the cut surfaces generously with salt and lightly with pepper, sprinkle with onions and basil, top with breadcrumbs, and put a generous dot of butter on each half.
  2. Arrange in a buttered baking dish, and bake in a preheated moderate oven for 10 minutes. Remove from the oven and brown under a moderate grill for about 3 minutes. Alternatively, if the oven is in use, simply grill under a moderate heat for 10–12 minutes, taking care not to burn.
