Ingredients

Quantity Ingredient
2 large avocados, peeled, stoned and cut into large dice
2 tomatoes, peeled, seeded and chopped
2 spring onions, finely sliced
crisp lettuce leaves
parsley, chopped
2 tinned pimientos, drained

Dressing

Quantity Ingredient
2 tablespoons oil
1 tablespoon vinegar
few drops tabasco sauce
1/2 lemon, juiced
salt and freshly ground black pepper

Method

  1. To make dressing, beat all ingredients together in a small bowl until mixture thickens.
  2. Put avocado into a bowl and toss gently with dressing. Add tomatoes and spring onions. Cover and chill. To serve, line individual plates with lettuce leaves. Place avocado mixture on lettuce. Sprinkle with parsley. Finely dice or sieve pimientos and spoon over.
