German apple cake

Ingredients

60g butter
75g sugar
1 egg
150g self-raising flour, sifted
60ml milk
4 apples, peeled, quartered and cored
1 lemon, juiced
sugar
cinnamon

Method

  1. Cream butter with sugar. Add egg and beat well. Add half of flour and beat to combine. Add milk and remaining flour alternately (this will make a thick mixture). Spread mixture over bottom of greased 23 cm springform tin.
  2. Cut quartered apples into thin slices but not all the way through. Put apples as you are preparing them in a bowl and squeeze over lemon juice. Place drained apples, cored side down, on cake. Bake in a preheated moderate oven for 1 hour. While still warm, sprinkle with sugar and cinnamon.
