Ingredients

Quantity Ingredient
crisp lettuce leaves
2 avocados, peeled, stoned and sliced
2 tinned pimientos, diced or cut into strips
8 black olives, halved and stoned
3 teaspoons lemon juice
parsley, finely chopped

Dressing

Quantity Ingredient
2 1/2 tablespoons oil
2 teaspoon lemon juice
1/4 teaspoon french mustard
few drops tabasco sauce
salt and freshly ground black pepper

Method

  1. Beat together dressing ingredients or shake them in a jar. Place lettuce leaves on 4 plates and arrange avocados on leaves. Sprinkle with dressing. Add pimiento, olives and lemon juice. Top with parsley.
