Ingredients

Quantity Ingredient
6 large globe artichokes
1.125 litres water
3 lemons
1 tablespoon plain flour
2 onions, chopped
250ml olive oil
salt and freshly ground black pepper

Method

  1. Cut stems off artichokes. Remove bottom leaves and with scissors trim off brown thorny tips of all remaining leaves. Cut off tops and halve each artichoke lengthways. Soak in 1 litre water and juice of 2 lemons.
  2. Meanwhile, sprinkle flour over onions and sauté in olive oil until lightly browned.
  3. Arrange artichoke halves, cut sides up, in roasting tin or large heavy frying pan. Add salt and pepper and juice of remaining lemon to onion and oil, and pour over artichokes. Add remaining water. Cover and simmer over low heat for 35–40 minutes or until artichokes are tender. Serve warm or cold.
