Ingredients

Quantity Ingredient
500g dried apricots
110g sugar
190ml cream
1 teaspoon natural vanilla extract
whipped cream and slivered toasted almonds, to decorate

Method

  1. Simmer apricots in water to cover for 25 minutes. Stir in sugar and cook for a further 5 minutes. Rub through a sieve or purée in a blender or food processor. Cool. Whip cream, add vanilla and fold into apricot purée. Spoon into small mousse pots or dessert bowls and chill. Decorate with whipped cream and almonds.
