Encyclopedia of Food and Cookery

An aromatic herb, which most home cooks know as bright green, glacé (candied) stalks used to decorate desserts, cakes and biscuits. Keep candied angelica airtight to avoid drying out, and if necessary wash in warm water to remove excess sugar, and dry before using.
