Ingredients

Quantity Ingredient
525g chicken, cooked and diced
60g sultanas
60g slivered almonds, toasted
3 sticks celery, finely sliced
6 spring onions, chopped
185g Mayonnaise
60ml orange juice
salt and freshly ground black pepper
lettuce leaves, orange slices and extra toasted almonds, to garnish

Method

  1. Combine all ingredients for salad. Spoon into a platter lined with lettuce leaves and garnish with orange slices and almonds.
