Ingredients

Quantity Ingredient
300g plain flour
1/2 teaspoon salt
15g compressed yeast
or 7g dry yeast
2 tablespoons caster sugar
1 egg, beaten
1/2 cup warm milk
60g butter, melted
1/4 cup raisins
1 apple, peeled, cored and sliced
caster sugar, to sprinkle
1 teaspoon ground cinnamon

Method

  1. Grease a 20–22 cm cake tin or deep sandwich tin.
  2. Sift the flour and salt into a large bowl. Add the dry yeast if using, and the sugar. Mix in the egg, milk and butter. Beat thoroughly, then leave to rise in a warm place until doubled in bulk.
  3. If using compressed yeast, cream the yeast with the sugar. Mix into the flour with the egg, milk and butter. Beat thoroughly, then leave to rise in a warm place until doubled in bulk.
  4. Turn out onto a floured board and knead lightly. Work the raisins into the dough. Shape into a large bun with floured hands and put into the prepared tin. Flatten the top with your fist and cover with sliced apple, pressing the sharp edge of the slices into the dough.
  5. Brush lightly with a thin syrup or with water alone, then sprinkle thickly with caster sugar mixed with the cinnamon, and leave to prove for 20 minutes.
  6. Preheat the oven to 190°C.
  7. Bake for 40–45 minutes or until well risen and golden.
