For this memorable dessert, two meringue cakes are filled with whipped cream (you could also use a good vanilla ice cream that has been softened) and fruit. We’ve used mangoes, but you could also use peaches in season.

Meringue case

Ingredients

4 egg whites
220g caster sugar
1/2 teaspoon vanilla essence

Filling

1 cup cream, whipped, (see Note)
1 cup sliced canned or fresh mangoes
1/2 cup fresh or frozen raspberries

Method

  1. Preheat the oven to 150°C. Cut two rounds of baking paper 20 cm in diameter, place each on a greased baking tray and spray with non-stick cooking spray.
  2. To make the meringue case, whisk the egg whites and the sugar together until very thick and glossy. Fold in the vanilla. Spoon the mixture into a piping bag fitted with a plain 1 cm tube. Pipe a layer of meringue over each baking paper round. Alternatively, spread the mixture to cover the rounds.
  3. Bake for 35–40 minutes or until crisp and pale golden. Turn off the oven and allow to cool completely in the oven with the door open.
  4. Just before serving, spread one meringue round with whipped cream. Arrange the mango slices over, then the raspberries. Top with the other meringue round and serve immediately.

Variations

  • Vacherin chantilly with fruits

    Make the meringue case as above. Just before serving, whip 2 cups cream and fold in 2 tablespoons Grand Marnier and 1 tablespoon sifted icing sugar. Put a layer of fresh fruit, such as strawberries, or sliced peaches, bananas, apricots or grapes, in the meringue case. Pile whipped cream on top and decorate with a little more fruit. If using peaches or bananas, first sprinkle slices with lemon juice to prevent discolouration. Serve immediately.

    Vacherin melba

    Make the meringue case as above and fill with whipped cream (or softened ice cream; see Note). Replace the mangoes with sliced peeled peaches.

Note

  • The whipped cream can be replaced with 3 cups vanilla ice-cream, softened.
