Children love to decorate gingerbread people. Yes, let them do their own thing – eyes, mouths, buttons or bikinis! You can buy traditional gingerbread men cutters as well as girl-shaped cutters. Make the icing, colour small quantities in separate little pots and teach the kids to use the icing to decorate the people as they want. Great fun.

Ingredients

Quantity Ingredient
125g butter
75g caster sugar
1/3 cup golden syrup
450g plain flour
1/2 teaspoon ground ginger
1 teaspoon ground cinnamon
3 teaspoons bicarbonate of soda
1 egg
2 teaspoons vanilla essence
currants, glace cherries, silver cachous and glace fruits, to decorate

Icing

Quantity Ingredient
80g icing sugar, sifted
2 tablespoons hot water

Method

  1. Preheat the oven to 180°C. Grease baking trays or line them with baking paper.
  2. Put the butter, sugar and golden syrup in a saucepan and heat gently, stirring occasionally, until the butter melts. Allow to cool.
  3. Sift the flour, ginger and cinnamon. Add the bicarbonate of soda to the cooled butter mixture and pour onto the flour mixture. Add the egg and vanilla and mix to a soft dough. Roll out to a thickness of 5 mm and chill if necessary.
  4. Cut out shapes with a gingerbread man cutter or a sharp knife. Place on the prepared baking trays. Put currants in place for eyes and buttons, and glacé cherries cut into strips for mouths. Bake for 10 minutes. Transfer to wire racks to cool.
  5. For the icing, combine the icing sugar and water and beat well until smooth. Using an icing pipe (or make baking paper triangles into cones for piping), ice the biscuits and decorate with currants, glacé cherries, silver cachous and glacé fruits.
