Ingredients

Quantity Ingredient
125g butter, softened
165g caster sugar, plus 2 tablespoons extra
1 egg
200g self-raising flour
2 tablespoons ground cinnamon

Method

  1. Using an electric mixer, cream the butter until soft. Beat in the 3/4 cup sugar until light and fluffy. Beat in the egg thoroughly. Sift the flour and add to the creamed mixture. Mix well.
  2. Form about 1/2 tablespoon of the mixture at a time into a small ball and roll in the combined extra sugar and cinnamon. Place on ungreased baking trays, spacing them about 10 cm apart, flatten slightly and bake for 15 minutes or until golden. Cool on the trays until crisp.
