Most Westerners know this dish. Popular the world over for its sweet-salty tastiness, it contains plenty of garlic and ginger.

Ingredients

Quantity Ingredient
4 skinless chicken breasts
4 teaspoons vegetable oil

For the sauce

Quantity Ingredient
2 tablespoons soy sauce
4 teaspoons mirin
2 tablespoons sake
2 tablespoons caster sugar
2 tablespoons rice vinegar
2 tablespoons root ginger, finely grated
2 tablespoons garlic, finely grated
2 dried chillies, finely chopped

Method

  1. Mix together all the ingredients for the sauce in a non-reactive shallow dish. Place the chicken in the sauce, turn to coat all over, cover and leave to marinate in the fridge for up to 1 hour.
  2. Add the oil to a frying pan over a medium heat. Once the oil is hot, add the chicken and fry on each side for 4 minutes, or until cooked through, then add all the marinade and bubble up until it is sticky and reduced. Serve, or divide into 4 portions, wrap and freeze separately. Use 1 portion for a bento box.
