Dishes of sashimi laid over seasoned sushi rice, this is opulent special occasion food, and worth a trip to a Japanese shop. As ever, all the fish needs to be sushi-grade.

A stunning, simple yet extravagant dish to share with friends.

Ingredients

Quantity Ingredient
250g Perfect sushi rice
2 Nigiri prawns
4 sashimi slices sea bream
4 sashimi slices tuna
4 sashimi slices salmon
4 sashimi slices yellowtail
4 sashimi slices surf clam
1 shiso leaf

Method

  1. Spoon the rice into an attractive bowl. It should still have a breath of warmth to it.
  2. Lay on the prawns and the fish, grouping the same type together and arranging them in a circular pattern on the rice. Add the shiso leaf.
  3. Serve with soy sauce, pickled ginger and wasabi paste. Sake makes an excellent accompanying drink.
