Dishes of sashimi laid over seasoned sushi rice, this is opulent special occasion food, and worth a trip to a Japanese shop. As ever, all the fish needs to be sushi-grade.

Salmon tends to be everyone’s favourite sushi and sashimi fish, so this is a good choice to serve to sushi novices.

Ingredients

Quantity Ingredient
250g Perfect sushi rice
12 sashimi slices salmon
1 king scallop
1 tablespoon salmon roe

Method

  1. Spoon the rice into an attractive bowl. It should still have a breath of warmth to it.
  2. Lay the salmon over the rice in a circular pattern. Slice the scallop horizontally 5 times, and arrange the slices in the centre of the bowl. Top with the salmon roe.
  3. Serve with soy sauce, pickled ginger and wasabi paste. Eat it with sake or shochu.
