Steamed vegetables with creamy tofu dressing

We have become used to roasting vegetables. Steaming them is a much healthier option, and the tofu dressing adds a lush silkiness to this dish.

Ingredients

Quantity Ingredient

For the salad

Quantity Ingredient
1 red pepper
1 yellow pepper
40g mooli
1 celery stick
1 teaspoon sesame seeds

For the dressing

Quantity Ingredient
120g silken tofu
10 chives
2 tablespoons light soy sauce
1 tablespoon lemon juice

Method

  1. Cut all the vegetables into bite-sized pieces and steam for 3 minutes. Drain, then cool them down.
  2. Mix all the ingredients for the dressing in the blender and mix it through the vegetables, then serve, sprinkled with the sesame seeds.
