Lightly grilled tuna with rocket

The Japanese version of a classic combination. I find the freshness of this dish incredibly cleansing and healthy feeling.

Ingredients

Quantity Ingredient
1 teaspoon sea salt
200g sushi-grade tuna block
100g rocket salad
1 teaspoon black and white sesame seeds

For the sauce

Quantity Ingredient
2 tablespoons soy sauce
1 teaspoon caster sugar
1 1/2 tablespoons rice vinegar
1 teaspoon sesame oil

Method

  1. Sprinkle the salt on all sides of the tuna and leave it for 15 minutes.
  2. Preheat a non-stick pan over the highest heat. When it is very hot, add the tuna. As soon as it colours, turn it to colour on another side. Remove from the pan once it is seared all over. Place on a plate, cover and put in the fridge to cool rapidly for 15 minutes.
  3. Mix together all the ingredients for the sauce.
  4. Slice the tuna into wafer-thin slices, place it on a plate with the rocket, drizzle with the sauce and scatter with the sesame seeds, serving any remaining sauce on the side.
