A great recipe to keep hunger at bay, light but incredibly tasty. I find this salad quite addictive. You can make more noodles than you need, then wrap portions individually and freeze them. Defrost under running water. Don’t be tempted to defrost them in a microwave, as this will soften their texture.

For the salad

Ingredients

Quantity Ingredient
200g soba noodles
240g baby spinach leaves
handful cherry tomatoes, (optional)

For the dressing:

Quantity Ingredient
4 tablespoons sesame oil
6 tablespoons soy sauce
2 tablespoons lemon juice
2 tablespoons white sesame seeds, crushed in a mortar and pestle, plus more to serve
2 teaspoons chilli powder

Method

  1. Bring 4 litres of water to a boil and cook the soba noodles for 15 minutes (or according to the packet instructions). Drain, then rinse the noodles under cold water. Drain really well once more.
  2. Mix together all the ingredients for the dressing.
  3. Put the noodles, spinach and tomatoes (if using) in a bowl, toss with the dressing, sprinkle with sesame seeds and serve.
