Miso soup is a favourite of mine, as you can come up with so many varieties depending on what you have in your storecupboard or fridge. It’s nutritious but calorie-light. Here are some of my most popular crowd-pleasers. If you are a vegetarian, simply use a miso paste that does not contain bonito flakes, and omit any other bonito flakes in the recipe.

Ingredients

Quantity Ingredient
20g japanese aubergine, sliced
1 quantity Basic miso soup

Method

  1. Grill the aubergine for 3 minutes on each side, then cut into 1 cm cubes. Add to the miso.
