Secrets of the Japanese power breakfast

The traditional Japanese breakfast is a hearty feast, a world away from a slice of toast grabbed on the go. A spread of dishes charms the eye and satisfies the tastebuds… though the flavours are a little stronger than those Westerners are used to at breakfast.

If you have made, portioned and frozen the rice and omelette parts of breakfast, and have a jar of Japanese pickles, it will only take five minutes to grill the salmon and make the soup.

You do not have to eat a Japanese breakfast to follow Sushi Slim, so this is here just to show you what you’re missing! If you want to try it, but don’t have time during the week, give it a go for brunch at the weekend. You will find that you’ll struggle to eat later in the day… which is, of course, part of the secret of the enviable Japanese figure.

Natto, a relish of fermented soy beans, can be an acquired taste. We mix it with soy sauce and eat it with rice. Try it; it’s addictive.

Beauty departments are now filled with sachets of liquid collagen to add to your beauty routine, but in Japan we incorporate this goodie into our daily diet. The skin-tightening effects are visible even the day after eating.

There is a restaurant in Tokyo that I have been to three times where they only serve collagen-rich grouper soup, in large communal bowls. The restaurant is full of women diners, who fight over the extra-rich soup left in the bottom of the bowl, while they are served by the all-male waiting staff.

We are taught that collagen is most easily absorbed by the body when it comes from fish, though it is also absorbed when it comes from poultry. Although red meat contains collagen, we think it is difficult to digest and so does not do the same great job on the skin.
