Black savourine with cardamom roasted plums and fruit bread

This recipe was contributed by Yarra Valley Dairy. Their cheeses are fantastic and the Black Savourine is a semi-matured, ashed goat’s cheese that has a creamy, slightly acidic, taste.

Ingredients

Quantity Ingredient
6 firm plums, halved and stoned
55g firmly packed brown sugar
60ml orange juice
4 cardamom pods, bruised
200g yarra valley dairy black savourine or other semi-matured ashed goat’s cheese
thinly sliced fruit bread, for serving

Method

  1. Preheat the oven to 200°C.
  2. Place the plums, cut side down, in a single layer in a shallow baking dish. Sprinkle with the sugar and orange juice and dot with cardamom pods. Bake for 20–30 minutes or until the plums are soft and tender – this will vary depending on the ripeness of the plums. Once cooked, remove from the oven and take the plums out of the baking dish so that they do not continue to cook. Allow to cool.
  3. Serve the cardamom roasted plums with the Yarra Valley Dairy Black Savourine and thinly sliced fruit bread.

Wine

  • This dish is not overly sweet, so choose a late-picked riesling rather than a botrytised wine.
