We tried these little sweets in Stavros’ shop where they were made by women in the village. It’s hard to believe that these tasty chocolate bites are classed as a ‘fasting’ food in Kythira because they contain no olive oil. Traditionally, the last week of Lent is seen as a ‘fasting’ week with no oil, meat, fish or dairy products.

Ingredients

Quantity Ingredient
1 cup ground almonds
1/4 cup caster sugar
1 tablespoon fine semolina
2 tablespoons honey
2 tablespoons ground cinnamon
2 tablespoons ouzo or brandy
180g dark chocolate, melted
1/2 cup finely chopped almonds

Method

  1. Put the ground almonds, sugar, semolina, honey, cinnamon, ouzo and melted chocolate in a small bowl and stir the mixture until well combined.
  2. Line a baking tray with baking paper. Wet your hands and take small pieces of the dough and roll into balls (about the size of a small walnut). Roll the balls in the chopped almonds, flatten and taper the ends a little.
  3. Place the koumara on the tray to firm up. To keep them longer, put them in the refrigerator.
