Ingredients

Quantity Ingredient
2 cups yellow split peas
1.25 litres water
2 garlic cloves, finely chopped
sea salt flakes, to taste
a drizzle extra-virgin olive oil
red onion wedges, to serve
olives, to serve

Method

  1. Place 2 cups yellow split peas, 1.25 litres water and 2 finely chopped garlic cloves in a large saucepan. Bring to the boil, reduce the heat, partially cover and simmer for 1 hour, stirring from time to time. When the peas are very soft, stir to make a purée and remove from the heat. Season the purée to taste with sea salt flakes.
  2. Serve warm or at room temperature with a drizzle of extra-virgin olive oil, wedges of red onion and some olives. If the fava thickens too much on cooling, stir in some hot water.
