100g uncooked glutinous rice, (see glossary)

Method

  1. Heat a frying pan or wok over medium heat and toast the rice without any oil for 8–10 minutes, or until lightly browned, tossing occasionally so it doesn’t burn. For a smokier flavour, allow the rice to turn a deeper shade of brown.
  2. Remove from the heat and allow to cool, then pound the toasted rice to a powder using a large mortar and pestle.
  3. The toasted rice powder is best used fresh, but can be stored in an airtight container in a cool dark place for several weeks.

Note

  • To make your rice powder more perfumed, you could also dry-roast the rice with some chilli, lemongrass and kaffir lime leaves.
