Sam, my son, has been a peanut butter fan since he was little. When we first cooked together we used to make chocolate crispies and marshmallow crispies, but it was his idea to add the peanuts – only we had none so we added peanut butter – a few tweaks later we had a recipe. It is so easy it is hardly a recipe at all. A great thing to make with small children.

Ingredients

Quantity Ingredient
40g butter
250g marshmallows
200g peanut butter
250g puffed rice cereal
50g salted peanuts, chopped

Method

  1. Line a 20 cm square baking tin with a double layer of cling film.
  2. Melt the butter, marshmallows and peanut butter together in a large saucepan, stirring.
  3. Add the cereal and peanuts and thoroughly mix together so they are totally covered in the marshmallow mix.
  4. Press into the prepared tin and chill until set. Cut into squares. Store in an airtight container for up to a week or so.

Note

  • This recipe is vegetarian and gluten-free.

Tip

  • To change these up a bit, try adding extra nuts or dried fruit.
