You can make your blend as hot or mild as you like; just add more chilli.

Ingredients

Quantity Ingredient
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon mustard seeds
1 teaspoon fenugreek seeds
1 teaspoon cardamom pods
1 teaspoon ground ginger
1 teaspoon ground turmeric
1/2-1 teaspoon chilli powder, depending on how much heat you want

Method

  1. Put a heavy-based frying pan over a medium heat and add all the seeds, moving them around so that they don’t burn. After about 1 minute, you will get a wonderful, fragrant aroma. Remove from the heat and leave to cool.
  2. Blitz the cooled seeds to a fine powder in a spice or coffee grinder. Mix in the remaining spices and give a final blitz. Store in a recycled Lucy Bee jar.
