Fried potatoes Altamura-style

My grandmother Rosa and my aunt Natalina made these fried potatoes especially for the children in our family and we absolutely loved them. You can never have too many! When I make this dish at home for my children, it takes me back with fond memories to Altamura. This is a versatile side dish to accompany any cooked meat or fish.

Ingredients

Quantity Ingredient
1 onion, finely chopped
1 garlic clove, crushed
1/2 red chilli
100ml olive oil
4 potatoes, cut into small cubes
1 tablespoon dried oregano
30g pecorino, grated
1 tablespoon dry breadcrumbs

Method

  1. In a wide frying pan over medium heat, sauté the onion, garlic and chilli in the olive oil for 3–5 minutes until golden. Add the potatoes and oregano and season with salt. Cook the potatoes for about 10 minutes on each side, undisturbed. Check one piece by turning it over – it should be golden. If not, leave the potatoes for another few minutes.
  2. Add the pecorino and breadcrumbs and then turn the potatoes over and season them again. Sauté the potatoes gently for a further 3 minutes but do not stir-fry them – you want a crust to develop on each piece. Add a little extra olive oil to the pan if needed.
  3. The potatoes are ready when they are crispy and golden all over and fork-tender. Serve hot as an accompaniment.
