Ingredients

125g butter, softened
1/2 cup brown sugar
2/3 cup golden syrup
2 1/2 cups plain flour
2 teaspoons ground ginger
2 teaspoons mixed spice
1 teaspoon bicarbonate of soda
smarties or currants, to decorate

Method

  1. Using an electric mixer, beat the butter and sugar until pale and fluffy. Beat in the golden syrup and, using a spoon or spatula, fold in the flour, ginger, mixed spice and bicarbonate of soda until a smooth dough forms. Divide the mixture in half and form each into a disc shape. Cover in plastic wrap and refrigerate for 2–3 hours until firm.
  2. Preheat the oven to 180°C. Line 2 large baking trays with baking paper.
  3. Take 1 dough disc from the refrigerator and roll it out between 2 sheets of baking paper to 5 mm thickness. Cut shapes using a teddy bear cutter, re-rolling any dough scraps. Decorate each bear with Smarties or currants.
  4. Place the bears on the baking trays and bake for 8–10 minutes until golden (the biscuits will still be soft when taken from the oven, but will firm while cooling). Meanwhile, repeat the process with the second dough disc, baking the bears in batches if necessary. Transfer to a wire rack to cool.
