Ingredients

Quantity Ingredient
8 small bananas, halved
1 litre ice cream
coloured sprinkles, to serve

Peanut brittle

Quantity Ingredient
1/3 cup caster sugar
50g salted roasted peanuts

Raspberry sauce

Quantity Ingredient
150g frozen raspberries
2 tablespoons sugar

Fudgy chocolate sauce

Quantity Ingredient
150g dark chocolate, chopped
1/2 cup thickened cream

Method

  1. To make the peanut brittle, line a small baking tray with baking paper and set aside. Place the sugar in a medium frying pan and cook over medium heat for 3–5 minutes, shaking occasionally, until the sugar caramelises. Add the peanuts, and use a fork to coat the nuts in the caramel. Spread onto the tray, and set aside to cool. Once cool, chop coarsely.
  2. To make the raspberry sauce, place the frozen raspberries, sugar and 2 tablespoons of water in a microwave-safe bowl and microwave for 2–3 minutes, stirring occasionally, until the raspberries are soft and the sugar has dissolved. Set aside to cool, then process in a blender until smooth.
  3. To make the fudgy chocolate sauce, place the chocolate and cream in a microwave-safe bowl. Microwave, uncovered, on medium power for 1–3 minutes, stirring occasionally with a metal spoon until smooth.
  4. Place each banana in a dish and top with 2 scoops of ice cream, raspberry or chocolate sauce, peanut brittle and sprinkles.
