Ingredients

Quantity Ingredient
2 punnets raspberries
2 x 85g packets raspberry jelly crystals
2 cups boiling water
1 3/4 cups cold water
1/2 cup single pouring cream, whipped

Method

  1. Divide 1 punnet of the raspberries between 14 watertight cupcake cases.
  2. Combine the jelly crystals and the boiling water in a medium jug, stirring until the crystals dissolve. Stir in the cold water. Pour the liquid evenly over the raspberries and refrigerate for 3–4 hours or until the jelly sets.
  3. Top each jelly with a spoonful of whipped cream and the remaining raspberries.
