Ingredients

60g butter, softened
1/3 cup caster sugar
1/4 teaspoon vanilla extract
1 egg
3/4 cup self-raising flour, sifted
1/4 cup milk
1/2 teaspoon natural pink food colouring
1/2 cup single pouring cream, whipped
1/3 cup strawberry jam
sifted icing sugar, for dusting

Method

  1. Preheat the oven to 170°C. Line two 12-hole mini cupcake tins with paper or silicone cases.
  2. Using an electric mixer, beat the butter, sugar and vanilla until pale and fluffy. Add the egg and beat until well combined. Using a spoon or spatula, fold in the flour, milk and food colouring until just combined.
  3. Transfer the mixture to the cases and spread evenly. Bake for about 20 minutes or until a skewer inserted into the centre comes out clean. Leave in the tins for 5 minutes before transferring to a wire rack to cool.
  4. To fill the fairy cakes, cut a shallow round from the top of each cupcake with a sharp pointed knife. Fill each cupcake with cream and jam, then replace the tops. Dust with icing sugar and serve.
