Ingredients

Quantity Ingredient
4 egg whites
1 cup caster sugar
natural pink food colouring
1 cup single pouring cream, whipped
6 strawberries, hulled and sliced
rose persian fairy floss

Method

  1. Preheat the oven to 120°C. Line 2 large baking trays with baking paper. Draw 6 circles 7 cm in diameter (using a 7 cm round cutter is a good guide) on each sheet of baking paper, a few centimetres apart.
  2. Using an electric mixer, beat the egg whites until soft peaks form. Gradually beat in the sugar, one spoonful at a time, until the mixture is thick and glossy. Beat in the food colouring, starting with a few drops, until the desired colour is reached.
  3. Divide the meringue mixture between the circles on the baking paper and use a palette knife to spread it out onto the rounds. Make a slight hollow in the centre of each.
  4. Bake for 90 minutes. Turn off the oven and leave the meringues inside to cool completely.
  5. Once cool, remove the meringues from the oven, and top with the cream, strawberries and fairy floss.
