Lamb souvlaki with tzatziki

Pop these on the barbecue for a much healthier alternative to sausages for your family. Unlike sausages (which sometimes contain only half meat and often include fillers and preservatives), you know what you’re getting with these delicious souvlaki.

Ingredients

Quantity Ingredient
1/2 teaspoons ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon sweet paprika
1 tablespoon olive oil
800g lean lamb, cubed
4 tomatoes, diced
2 teaspoons red wine vinegar
2 tablespoons extra virgin olive oil
fresh mint leaves, to serve
4 pitta breads, to serve

Tzatziki

Quantity Ingredient
1 lebanese cucumber, grated
1/2 garlic clove, finely chopped
2 tablespoons mint leaves, finely chopped
200g greek-style yoghurt

Method

  1. To make the tzatziki, combine all of the ingredients in a bowl. Refrigerate until ready to serve.
  2. To make the lamb souvlaki, place the spices and oil in a large bowl. Add the lamb, tossing to coat, and leave in the refrigerator to marinate for at least 30 minutes or overnight.
  3. Preheat a chargrill pan or barbecue grill to medium–high. Thread the lamb onto 8 wooden skewers. Cook the lamb skewers for 10–12 minutes, turning regularly until browned and cooked to your liking. Transfer to a plate, cover loosely with foil and allow to rest for 5–10 minutes.
  4. In a bowl, stir together the tomatoes, vinegar and olive oil until combined. Transfer to a serving bowl and scatter over a few fresh mint leaves.
  5. Serve the lamb souvlaki with the pitta breads, tzatziki and tomatoes.

Baby’s serve

  • For a younger baby, blend together some cooked lamb and yoghurt until smooth. You may need to add some liquid (water or your baby’s milk) to achieve the desired consistency. Alternatively, if your baby is managing finger foods, cut into small pieces. For an older baby, keep the puréed consistency lumpier or serve as finger food.

Toddler’s serve

  • Serve as is, cut into smaller pieces if needed.
