My dad is famous for his scones. He doesn’t bother with cut-out round scones, which leaves too much leftover dough. He just takes a large knife and cuts them into squares for an easy, no-fuss, but still perfect outcome. He doesn’t bother brushing the tops of each scone with milk either. He thinks it makes no difference, whereas I think it makes for a slightly prettier scone. You can decide for yourself which way is best!

These scones have no added sugar, which makes them perfect for kids, but if you’re not serving them with jam and want a little sweetness, add a tablespoon of sugar with the flour.

Ingredients

450g wholemeal self-raising flour
60g butter, diced
310ml milk, plus extra for brushing
or 310ml buttermilk, plus extra for brushing
125g fresh blueberries
cream, to serve
or butter, to serve

Method

  1. Preheat the oven to 230°C. Line a baking tray with baking paper.
  2. Sift the flour into a large bowl and return the sifted husks to the bowl, reserving 2 tablespoons to sprinkle over the scones. Using your fingers, rub the butter into the flour until the mixture resembles coarse crumbs. Make a well in the centre and mix in the milk. Gently knead through the blueberries. Pull the dough together into a rough ball, turn out onto a floured surface and knead lightly.
  3. Gently pat the mixture out into a large rectangle, about 2–3 cm thick. Use a large knife to cut into 5 cm squares. Arrange the dough squares so they are close together on the prepared tray and brush the tops with milk (or not!). Sprinkle over the reserved flour husks. Bake for 10–15 minutes, or until well risen and golden.
  4. Serve the warm scones with cream or butter.

Baby’s serve

  • For a younger baby, wait until your baby is managing some finger foods (which may not happen until 8–9 months or older) before offering him these scones. When he’s ready, cut into pieces that he can easily hold and spread with fruit purée or a little butter. For an older baby, serve as for a younger baby, as finger food.

Toddler’s serve

  • Serve as is, cutting into smaller pieces.
