Ingredients

Quantity Ingredient
1 free-range chicken breast
1/4 cup mayonnaise
6 slices wholemeal bread
1 tabespoon chives, finely snipped
or 1 tablespoon parsley, chopped

Method

  1. Place the chicken breast in a small saucepan and cover with water. Bring to the boil then reduce the heat and simmer for 10–12 minutes, or until the chicken has cooked through. Remove from the saucepan and set aside to cool.
  2. When the chicken is cool, shred with your fingers or dice and place in a bowl with the mayonnaise and herbs. Stir until well combined. Place 3 slices of bread on a board, divide the chicken mixture between them and top with another slice of bread. Cut into halves to serve. Alternatively, remove the crusts and cut into 3 pieces for finger sandwiches.
