By mid-afternoon it’s time for a snack, and out of the oven to cool on a rack come some cookies we’ve made with oatmeal and raisins. Grandma’s recipe’s so good – they taste just amazing!

Ingredients

Quantity Ingredient
125g butter
2/3 cup brown sugar
2 tablespoons milk
2 eggs
1 cup self-raising flour
1/4 teaspoon ground cinnamon
1 1/2 cups rolled oats
1/2 cup raisins

Method

  1. Using an electric mixer, cream the butter until soft. Beat in the sugar until light and fluffy. Add the milk and eggs and beat thoroughly. Remove the bowl from the mixer, sift in the flour and cinnamon and lightly stir until just combined. Stir through the oats and raisins. Refrigerate for 2 hours, or until the dough is firm (this is not crucial, but the dough is easier to work with if it’s cold).
  2. Preheat the oven to 180ºC. Roll heaped tablespoons of dough into balls and arrange 5 cm apart on non-stick or greased baking trays. Press down with a wet fork to flatten slightly. Bake for about 15 minutes, or until golden. Transfer to a wire rack to cool.
