Silky green tea, lime & avocado mousse

If there was one food I could not live without, or consider more well rounded, it would be the avocado. Just one avocado contains 40% of your daily fibre, 30% of your daily potassium and 30% of your daily folate needs.

As a source of fat, they’re not only a rich source of oleic acid (Omega-3 fatty acids), they also lower bad LDL cholesterol and raise good HDL cholesterol. This silky flesh, helps to re-establish hormonal balance, depresses insulin production, maintains clear smooth skin, stabilises energy levels and is a rich source of digestive enzymes.

Ingredients

Quantity Ingredient
1 large ripe avocado, flesh
or 2 small ripe avocado, flesh
2 limes, Finely grated zested and juiced
50g raw honey or coconut nectar50
50ml melted coconut oil
1/2 teaspoon matcha powder
pistachios, finely chopped, to decorate

Method

  1. Place the avocado flesh, lime zest and juice, honey or coconut nectar, coconut oil and matcha powder into a blender or food processor and blend together until fully combined and smooth.
  2. Transfer the mixture to 2 serving dishes of your choice. Cover with clingfilm (plastic wrap) and place in the refrigerator to allow to firm for about 1 hour.
  3. When ready to serve, sprinkle over the pistachio crumbs and enjoy the smooth indulgence. (This mousse should be eaten on the same day before the avocado starts to discolour.)
